Authentic home-made sourdough bread made with einkorn flour, ground the day I make the bread.
Einkorn is an ancient grain, an ancestor of modern wheat. It is reported that it is easier to digest due to gluten that is somewhat less strong. Also, the fact that the bread is a true sourdough aids in the digestibility of this bread.
It takes a couple of days to make sourdough bread, so you'll need to call for availability. I keep only a small amount in the freezer at a time, to ensure that it is as fresh as possible.
